Ingredients
- 1¼ cup mealie-meal (cornmeal)
- 1½ cup all-purpose flour
- 1 cup freshmilk
- ½ cup sugar can be less
- ⅓ cup vegetable oil
- ½ teaspoon salt
- 1 egg
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- A few drops of vanilla essence (optional)
- A drop of egg yellow (optional as well)
Instructions
- Preheat oven to 350F/180C. Have all your ingredients out.
- whisk the egg and milk together and set aside.
- sift cornmeal, all-purpose flour, baking powder, baking soda and salt at this stage add sugar and stir
- Mix together the egg and oil mixture combined earlier on and pour it into the bowl with the dry ingredients and make sure to thoroughly mix well and everything nicely combined . Set aside the batter mixture and start greasing your baking tin with bit of margarine and dust off with a bit if flour.
- Pour your cornmeal batter into the tin and bake for about 45minutes or until skewer comes out clean when inserted.
Please note that this can be enjoyed for breakfast, tea, snack , dessert with custard and cream its really up to you how you want to serve it there’s no hard rule that says it should be served like this and that.
Another thing to note is that because l am not a fan of sweet things, l cut the amount of sugar to about a 1/4 cup and it came out perfect
This is the basic recipe but what l have discovered is from any recipe is that you can play around with it to suit your taste buds etc
Other optional things you can add are nuts or raisins as well the sky is the limit
